Giveaway Winner & a Chicken Dinner

Okay, it's my chicken salad recipe this week, not dinner, but I liked the rhyme. It's worth mentioning it's a great chicken salad I used at my son's wedding, and I make it every few weeks for lunch or dinner thinking of you. Now for our giveaway winner:

Your comments were fun to read as I learned the majority of us have enjoyed summer chilling out with our families and reading. A few vacations were mentioned, and I'm jealous. It's not my year this year, but that's okay. I've had enough road trips to last awhile.

Do enjoy my fruity fun chicken salad this weekend, and make it super healthy by using yogurt instead of mayo. It's really good that way, I promise!

The Balanced Writer's Chicken Salad

1 can of chicken or 1 1/2 cups
1/2 cup of mayo or plain Greek yogurt
1/4 cup of chopped celery
1/2 cup of sliced red grapes
1/2 cup of chopped apples
1/2 cup of chopped, toasted walnuts
1/2 teaspoon of salt
Optional: a splash of lemon juice

Mix well. Chill. Serves 4 to 6.
