Happy Autumn! Can you believe Halloween is around the corner? It's my favorite time of year because first and foremost, I love pirating at Swansbrough Manor. I also love all things pumpkin, cooler Georgia temperatures, and the smell of burning leaves.

Pumpkin Spiced Caramel Corn 

Make your friends a sweet treat in just 30 minutes! This is my favorite caramel corn recipe when I'm in a hurry. It's easy to make, pretty fast, and there's all kinds of options you can choose by adding spices or seasonings to the caramel. Pumpkin spice is my favorite!

  

Recipe 

3 tablespoons of butter or margarine
3/4 cup of brown sugar
3 tablespoons of light or dark corn syrup
1/2 teaspoon of vanilla
1/4 teaspoon of baking soda
6 cups of popcorn or 1 bag of popped microwave popcorn
Optional: 1/4 teaspoon of pumpkin pie spice

Instructions: Melt butter for 30 seconds in a medium glass bowl. Stir in brown sugar and corn syrup. Microwave for 2:45. Carefully mix in vanilla and baking soda (and pumpkin spice). Pour over popped corn in a large glass bowl. Microwave for 30 seconds, stir, and repeat 3 more times for a total of 2 minutes. Spread out on a cookie sheet or tin foil to cool.
