Recipe of the Month: My Fav Lime Marinade

This marinade is awesome with boneless, skinless chicken breast (grilled), and a plate of Caribbean coconut rice. Don't forget the grilled pineapple!

Lime-Garlic Marinade

2 cloves of garlic
1/2 cup of olive oil
1/3 cup of lime juice
2 tablespoons of lime peel
2 teaspoons of brown sugar
1/2 teaspoon of crushed red pepper flakes
1/4 teaspoon of salt

Add garlic to running blender. Add remaining ingredients and blend until smooth. Pour over meat choice and marinade 4 hours or overnight.

*Tip: You can substitute orange juice for the lime juice, orange peel for the lime peel, and marinade with pork.
