Taco Soup Quick Fix

It's mid-autumn 'round these Georgia parts and time to get out the soup pots. This fast and easy Taco Soup recipe can be made in the Crockpot or on the stove. It's one of our family favorites. Enjoy!

Taco Soup

1 lb ground turkey
1 small onion, diced, or 1 tablespoon of onion powder 
1 can of Rotel
1 can of corn
1 can of red beans
1 can of black beans
1 cup of chicken stock
1 packet of Hidden Valley Ranch Dressing mix
Optional: One handful of chopped cilantro

Sautee onions with turkey until meat is brown and onions are soft. Add remaining ingredients. Bring to a boil. Reduce heat, cover and simmer for 15 minutes. Serve with cheese, plain yogurt (or sour cream), tortilla chips and avocado. For Crockpot, add cooked turkey and onions, and the remaining ingredients to a Crockpot. Heat on low for 3 hours.
