Recipe of the Month
One of my favorite fast and easy meals has only 3 ingredients. It's almost a cheat posting this recipe idea because Easy Potatoes and Sausage takes just a few minutes to prepare, and it's great as a side dish or main meal. This is a smart idea for March because it's not too cozy and not too light. Either way, it has a comfort food feel and is yummy served with fruit or a smoothie.
Easy Potatoes and Sausage
1 bag of frozen potatoes O'Brien with green and red peppers
1 lb of skinless turkey Kielbasa sausage
1 cup of shredded cheddar or Italian cheese
Slice and fry turkey sausage in a bit of olive oil. Set aside. Fry potatoes according to package directions. Add sausage the last two minutes. Remove from heat and stir in shredded cheese until melted. Serve with eggs or fruit. Easy as 1-2-3!
