Dinner Dilemma? Doritos!

This month's recipe is actually a collection of family recipes that feature the fun food, Doritos brand tortilla chips. At our house, I'm not big about keeping bags of "junk" chips around unless they are a little healthier or organic. Sometimes, though, I'll buy them to make fun recipes for a little surprise. Each of these recipes is tried and true and very yummy. They aren't uber healthy, but substitutions can be made with other ingredients to lighten them up.


Doritos Salad Meal
1 head of romaine or 1/2 head of iceberg lettuce
1/2 cucumber, diced
1 tomato, diced
1/2 onion, diced
1 can of kidney beans, drained and rinsed
1 cup of shredded Cheddar cheese
1/2 large bag of Doritos 
1 bottle of Kraft Catalina (French) Salad Dressing to taste.
Optional: 1 cup of corn

Mix all ingredients in a large salad bowl until blended. The dressing flavor is key. Cucumbers,

tomatoes and onions are to taste. Does not save well. Eat it fresh!

Doritos Casserole 
1 lb of ground beef or turkey, browned and drained
1 large jar of taco sauce
1 small can of chopped chiles
1 small can of evaporated milk
1 can of cream of mushroom soup
2 cups of shredded Cheddar cheese
1 large bag of Doritos

After draining grease from browned meat, stir in taco sauce and chiles and warm. In a separate pot, warm the milk and soup together, stirring until smooth. Grease a 9 X 13 pan and layer: meat sauce, milk sauce, cheese, crushed Doritos, two times. Make sure to finish with a top layer of Doritos! Cover with foil and bake at 350 degrees for 30 minutes. Wonderful comfort food.

Taco Doritos
1 lb of ground beef or turkey, browned and drained
1 packet of taco seasoning
1 cup of sour cream
2 cups of shredded Cheddar cheese
1/2 bag of Doritos 

Add taco seasoning to cooked, drained meat according to seasoning packet directions. Grease a 9 X 13 pan. Layer taco meat, small spoonfuls of sour cream, cheese, and Doritos, two times. Cover with foil and bake on 350 degrees for 30 minutes, or speed it up by baking at 400 degrees for 20 minutes. Serve on a bed of romaine lettuce.
