Cropped out the chunk of chocolate under my little fingernail. Sorry you had to miss that. |
Recipe of the Month
I hesitate to call these treats bars, because they are so rich I cut them into fudge size cubes. The best part of this recipe is it's made in a 9X13 pan, so you get a lot of bang for your buck. They're not too naughty, and they're fast to make. If you love Reece's peanut butter cup candy, you'll want to make these to save money and calories. It's a win-win-win! They are amazing...
No Bake Chocolate Peanut Butter Crunch Bars
Ingredients
1/2 cup of butter; melted
2 cups of Rice Chex cereal; crushed fine
2 cups of powdered sugar
1 teaspoon of vanilla
1 cup + 4 tablespoons of peanut butter
1 1/2 cups of semi-sweet chocolate chips
Directions
In a mixer, combine the melted butter, cereal crumbs,
powdered sugar, vanilla, and 1 cup of peanut butter until well blended. Press
evenly into the bottom of an ungreased 9×13 inch pan. In the microwave, melt
the chocolate chips together with the 4 tablespoons of peanut butter, stirring
every 30 seconds until melted. Stir until smooth. Spread over the peanut butter
layer. Refrigerate to firm up the chocolate before cutting into 1-inch squares.
Disclaimer: This recipe is a Pinterest "win" discovery. It has been altered to lower some of the fat and eliminate gluten. A thumbs up for our family we'll be noshing on all summer!
