Even if you don't like broccoli...


...you will like, if not love, this Broccoli Salad recipe. Discovered this past weekend in Chattanooga, Tennessee...okay, back up. The truth is, I spent a relaxing weekend with my best friend in Chattanooga last week, and she made me this super delicious Broccoli Salad. The amazing thing (to me, anyway) is that I don't like broccoli although I can tolerate it raw. Anything's better with bacon and cheddar, but there's something special about the white dressing that takes the bitterness out of the vegetable and makes everything taste fresh and sweet.

Even if you don't care for broccoli, you will like this colorful, unique salad recipe. And if you love broccoli, I think it will knock your socks off!

CYNTHIA'S BROCCOLI SALAD


SALAD

2 cups of sharp cheddar cheese cubes
3 Roma tomatoes,diced
2 bunches of broccoli florets
1 package of bacon cooked and crumbled (Microwave bacon is okay.)
1/2 snack box of raisins (Optional. I don't use them.)

DRESSING

1 c. of mayo
1/2 c. of sugar
2 tbs. white vinegar

Mix dressing separately before adding to salad. Serve immediately or after chilling a few minutes. Recipe cuts in half well. Does not keep.

Oh my gosh talk about totally and utterly delicious!!! I'm a huge broccoli fan so it's sort of unfair but I'm glad you shared it with us!!! I know I'll love this salad!!!

Okay, I can not imagine why raisins would be in this. *shudder* I do like cooked broccoli casserole, and for this to be a salad appears to be downright yummy (I love cheese too!)

and you can use purple onion in it too, but I don't like onions :)...Glad you liked it...we would make this at least once a week out at BYU during the summer for quad BBQ's, it was always requested :)

Cynthia, I love red onions but I don't think I'd like them in this because it would interfere with the sweet taste. Good tip though if anyone else wants to try it.
