Loaded Baked Potato Pizza

Recipe of the Month

This month's recipe is one of our family favorites: Loaded Baked Potato Pizza. If you've never had
baked potato pizza, you don't know what you're missing. Even in a house full of picky eaters, everyone I know loves putting away the thick, creamy slices of this chunky variation. It's easy and inexpensive to make and very filling. Grab yourself a ready made pizza crust, and give this cozy idea a try.



Baked Potato Pizza

1 pizza crust
3 to 4 baked potatoes, peeled and chopped
1 tablespoon of melted butter
1/4 teaspoon of garlic powder
1/4 teaspoon of Italian seasoning
1 cup of sour cream or plain Greek yogurt
4 to 6 pieces of crumbled (turkey) bacon
1 cup of shredded mozerella
1 cup of shredded Cheddar
Chopped green onions or chives to taste. 

In a small bowl, mix melted butter, garlic, and Italian seasoning with sour cream. Fold in chopped potatoes. Pre-cook pizza dough for five minutes on 400 degrees. Spread on potato mixture. Sprinkle bacon, cheese, and onions over the top. Bake for 15 minutes more or until lightly brown.
